Creating a truly exclusive dish is simple when using fresh products blended with the right sauce.  Add some zest to that special dish with our very own Simply West Coast Sauces.  Used for either marinating or as a dipping sauce, this delicate touch is all that you need to make your event outstanding.  Made from all natural ingredients, these sauces are designed to make cooking seafood at home easy for even the most novice of seafood cooks!

Recipe Name:
  Seared Halibut
Serves:

Fresh Ingredients:
  1 pound fresh Halibut
Ingredients:
  wasabi paste
black sesame seeds
black pepper
Steps to make:
  Cover halibut with wasabi paste.

Pleaster with a thin layer of pepper corns mixed with black sesame seeds.

Sear at high heat in sesame/peanut oil mixture until blue (as you do with Ahi) Serve as is with daikon or cucumber and natural pickled ginger and soya.

Recipe Name:
  Mussels in white wine
Serves:
  2
Ready in:

Fresh Ingredients:
  2 pounds fresh mussels
Ingredients:
  3tbsp olive oil
1tbsp butter
3 cloves garlic
1 small onion
2 glasses white wine (1 glass for sauce)
1 glass tomato juice
2 stalks celery
2 ripe tomatoes (chopped)
1 tsp salt
1tsp cayenne
1/4 tsp oregano
Steps to make:
  Chop the onion and garlic finely, add to oil and butter and bring to a simmer slowly. Simmer on low heat for 20 minutes.

In another pan combine 1 glass wine and all other ingredients except mussels. Simmer this for 20 minutes then add onion and garlic.

Cook rapidly uncovered until reduced, remove from heat.

Strain liquid thruough sieve and keep 1/4 of the vegetables to add to the broth.

Heat 1 glass of wine to boiling point add mussels, reduce heat and steam for 3 minutes...shake pot around.

Strain broth from the mussels through a chees cloth into the sauce.

Serve immediately.
Make sauce in morning or night before if possible..........
