Summer is finally here!

The month of June has most certainly arrived in grand style…with summer arriving in the usual Vancouver style, children counting down the remaining days of school before summer holidays and Father’s Day right around the corner, there’s so much to celebrate!

With the warm weather upon us, BBQ’s are being dusted off and fired up with social calendars not far behind!  Here’s a great recipe, from our own chef, Shaun Spooner, to get you started:

Sautéed Sea Asparagus
The perfect accompaniment to chicken, fish and seafood or as a stand-alone appetizer…

  • ½ lb. fresh sea asparagus
  • 1 shallot
  • 2 oz. butter
  • lemon juice to taste

Clean and soak asparagus for 1 hour in cold water.  Drain, then steam or blanch for 1 to 2 minutes.  Rinse in cold water and drain.  Sweat (or sauté on very low heat) shallot in butter for 5 minutes; do not allow to burn.  Add asparagus to pan and sauté for 2 to 3 minutes.  Turn mixture out of pan, sprinkle with lemon juice and serve.

Tangy Thai Aioli

Dress up your crab cakes or any grilled or baked fish with a dollop of this exotic sauce!  Or serve as a dip for yummy yam wedges….

Fishmongers’ Marinade

Create a dramatic dish by marinating your favourite fish for 20-60 minutes and bake, broil or BBQ as recommended by our fishmongers.  Add a little more garlic or ginger to make it your own.  Serve with steamed vegetables or rice…voila!

Sassy Sesame Sauce

This “Sassy” sauce has got class and versatility!  Serve it alongside crispy baked fish or create a side dish by combining it with freshly chopped cabbage, onions and carrots.   This sauce is also wonderful marinate – soak fish for 20 minutes then bake.

Sinful Coconut Cream Sauce

This sinfully delicious sauce is divine with anything!  It’s so versatile that you can also create hollandaise sauce by heating it up.   

The beginning of this season has also brought some new and exciting changes to Dundarve Fish Market.  Many of you have had the pleasure of knowing and working with Kim Jones over the last year. She has decided to pursue her career as a Veterinary Technician and has therefore relinquished her position as General Manager however staying on with us as a server/manager on a part time basis.  A big thank you Kim- we all wish you much success in your future endeavor!
